ingredients


    
1.5kg of lamb in pieces

    
8 artichokes

    
750g of shelled peas

    
1 onion

    
2 crushed garlic cloves

    
4 tablespoons of oil

    
1 dose of saffron

    
tablespoons ginger

    
1 bouquet of coriander

    
Candied lemons

   Olives
  
Salt pepper 


Preparation 


Artichokes tajine and peas is a delicious Moroccan dish, a recipe that makes sense of vegetables.

 fresh artichoke hearts, peas, and meat. This dish is made with: 

lamb, and ground beef meatballs but you can make it with chicken, it will always be very good. In a large pot, fry the pieces of meat with oil. As soon as they are golden, add the finely chopped onion and garlic. Season with saffron, ginger, stringed cilantro, salt, and pepper. Sprinkle with 1L of water and cook over medium heat for about 35 to 40 minutes. 

 If necessary, add the water again. Add the artichokes, the peas, the lemon scoop cut into small pieces and leave leather for 20 minutes over very low heat.  

Then add the olives and let simmer for 5 minutes. Arrange in a presentation dish, fill the artichoke bottoms with the peas and cover with the creamy sauce.
