Almond Briouate Recipe



Briouate or El Briwate is a typical Moroccan pastry that is tasted during the month of Ramadan, this pastry is very refined, succulent but unfortunately very caloric. briouates are made from Brick's leaf and a scented stuffing with cinnamon, orange blossom, and gum arabic (Mesca el houra) then cook in a frying bath, but they can be baked lightly buttered.
I used the square Brick leaves, the rounds can also be used.

ingredients:


Brick sheets

300 g ground almonds

50 g caster sugar

30 g melted butter

1 teaspoon of cinnamon

1 pinch of gum arabic powder

1 pinch of salt

2 tablespoons of Samia orange blossom water

1 egg yolk

300 g of Samia honey

Frying oil



Preparation:


In a blender, put the almond powder, cinnamon, gum arabic, a pinch of salt, 3 tbsp. melted butter and 2 tbsp. the water of orange blossom water and mix everything until you obtain a homogeneous and manageable stuffing if you need liquid to add orange blossom.
With this stuffing make small balls the size of a walnut using your hands.

Cut the pastilla leaf into large strips, brush each with remaining melted butter and arrange a marzipan dumpling.


Fold in the shape of a triangle proceeding from right to left than from left to right. Glue the last part of the thong with egg yolk.


Brown the briouates on both sides in a hot fry and dive in honey.
Drain and decorate with crushed almonds if you wish.



Note:
If you have no almond powder you can also scald the whole almonds, top them, fry them and mix them with sugar, butter, cinnamon, gum arabic, and orange blossom water.
Before frying, briouates can be stored in an airtight container in the freezer.

Serve cold briouates accompanied by mint tea.
