 Mhancha with the minced meat that I propose to you today is flaky at wish I use the filo dough which is easily found in supermarkets as well as in the oriental groceries I find them best baked!
Mhancha a succulent dish that finds its origin in the cities of the Maghreb in Algeria and Morocco, in particular, its Arabic name means serpentine or serpentine because of its shape, at the base, it is a sweet recipe of pastilla leaves coated with smen or melted butter and enclosing a stuffing with almonds flavored with cinnamon, it is baked and then sprinkled with honey, a marvel that say more I will share with you my recipe in the coming days Incha Allah!

Ingredients for 7 people:


For the stuffing:

450 g ground meat

2 onions minced

30 g of butter

2 tablespoons of oil

3 tablespoons chopped parsley

3 tablespoons chopped coriander

1/4 teaspoon of nutmeg

1/4 teaspoon cinnamon

1/2 teaspoon of ginger

1/2 teaspoon sweet pepper (paprika)

1 teaspoon of Tandoori spices (optional)

Salt and pepper

1 egg

4 square cheese spreads (optional)

For folding:

7 large sheets of filo pastry

80 g of Smen or butter



Preparation:


In a frying pan over low heat, melt the butter with the oil and brown the chopped onion. Add the minced meat, spices, salt and pepper and stir until the meat is cooked and the liquid is completely absorbed. Remove from heat then add the coriander and chopped parsley, egg beaten omelette and cheese cut into small pieces, let cool.
Melt the 50 g butter.
Unroll the filo leaves, taking care to keep them under a clean cloth to prevent them from drying out.
On the worktop, place a sheet of filo fold in half lengthwise.
Place along the edge of the filo leaf 2 to 2.5 cm stuffing. Roll the pastilla leaf around the stuffing to get a long pudding. Wrap Mhancha's pudding on itself to give it a snail shape.
Repeat to get 7 Mhancha. Place the Mhancha on a baking dish lined with baking paper, brush with smen, or melted butter.


Cook the Mhanche in a preheated oven at 374 ° f  for about 20 to 25 minutes until they turn a nice golden color.
Serve the Mhancha plain or decorated with flaked almonds, icing sugar, and cinnamon.
