Like many, you pretend you do not have the time to make your homemade pie pasta and you buy them ready made. If I told you that in 5 minutes top time you will change forever the life of your pies, sweet or salty. Follow these easy steps and create a delicious homemade Shortcrust pastry  dough that will make all the difference. You will be able to flavor your dough so that your pie is really tasty, until the last crumb. In this article: The recipe (ingredients, steps), tips.

Ingredients:


250g of flour
125 g diced butter and ointment
3 c. tablespoons sugar
1 C. coffee spice gingerbread (or cinnamon powder)
1/2 c. salt
1 egg yolk
50 ml of water


Steps :


Remove the butter 2 hours before the beginning of the recipe so that it is soft, but not melted
Mix the dry ingredients: flour, salt, sugar, spices in a salad bowl
Add the soft butter and knead with your fingertips for 3 minutes then "sand" the mixture by rubbing it between your hands
Stir in the water and the egg yolk to bind the dough, mix fairly quickly with the flour and form a ball
"Mill" your dough on the work surface 2 or 3 times (crush it with the palm of your hand to integrate the butter)
Flour your pie pan (roll out the dough and put it on a sheet of baking paper in the pie pan)
Prick it with a fork and reserve it in the fridge

 Tips


1. Butter, at temperature: your butter must be out 2 or 3 hours before making your Shortcrust pastry , to be soft, but not melted. Otherwise, pass it through the microwaves 3 x 15 seconds at low power to soften it.

2. The technical movements: sanding, milling ... Do not worry, these are just technical terms. Sabler = rub the flour / butter mixture between his hands, as when you are at the beach and play with sand ... Milling = crush your dough with the palm of your hand on the worktop so as to obtain a good Shortcrust pastry homogeneous.

3. Customize your dough according to the pie! You can not imagine all you can do with this basic recipe. To give more flavor to your Shortcrust pastry, or you add a teaspoon of powdered ingredients at the beginning of the recipe with the flour (example: cocoa, cinnamon, spices, cumin, herbs de provence ...), or you infuse in the 5cl of water, let cool and use this flavored water in the recipe (example: infuse earl gray tea, verbena, soluble coffee etc.)


Some ideas of association:


- Chocolate tart = cocoa or cinnamon or coffee soluble in the dough

- Fruit tart (peaches, apricots or pear): infuse verbena with water or earl gray tea ...

- Tart with tomato, quiche or other savory pies: herbes de Provence, curry or parmesan in the dough
