I share with you today a new recipe of a dry cake that I prepared for the Aid El Adha  delicious shortbreads with crushed almonds and candied cherries known as volcanoes or ain mauka
(the owl's eye) funny name is not it! They look like Mchewek Algerian cake with almonds but are different a little bit in the ingredients that make it up. It's ultra-sweet biscuits and perfects to accompany a good coffee during the snack, very easy to prepare and keep very well in a hermetic box. For the economical version, you can replace almonds with peanuts, sesame seeds, or grated coconut.

These small sweets are likely to seduce you at tea time, this delicious combination of almonds and candied cherries will not leave you indifferent. So, just give it a try and enjoy the tasting.

Ingredients: For about thirty biscuits


1 egg

60g softened butter

125g of sugar

75g crushed almonds Samia

80g of Semolina Samia

155g of flour

1/2 tbsp of baking powder



For the decoration:


1 egg white

Crushed almonds Samia

Candied cherries cut in half

preparation


With a mixer, mix the butter and sugar until the mixture is white, and add the egg.

Add the crushed almonds to the mixture, then the flour and the baking powder.

Divide the dough into small balls, roll them in the egg white before passing them in crushed almonds, and flatten the balls to about 4 to 5 cm in diameter.

                                     


Place them on a baking sheet covered with baking paper, space them well, press lightly on the middle, and place a half candied cherry.








Bake the cookies in a preheated 350 f  oven for about 15 minutes.

Let the cookies cool before taking off. To be kept in a hermetic box.
