These little chocolate cookies were found on my table for Eid el-Fitr, the party that marks the end of Ramadan. And they were not alone: ​​shortbreads with jam, date makrouts, and traditional ghribas kept them company, to the delight of gourmands!

The ghoribas are biscuits from the Moroccan pastry and that we find in different variants. The best known of them is the almond ghoriba. The secret of this greed: a crunchy pastry on the outside and melting inside, in a crackled aspect coated with icing sugar

These little cocoa cookies particularly pleased the children who rushed overhearing the word "chocolate".

FYI, chocolate cookies are a Moroccan cake-shaped ball crackled on the top that comes almost endlessly: sesame, walnut, almonds, coconut, chocolate, etc.


Ingredients for about fifty chocolate cookies  (ghribas) :

Ingredients

250g of flour

1 sachet of baking powder

3 eggs

200 g of sugar

1 sachet of vanilla sugar

70 g melted butter

75 g of cocoa

1 drop of bitter almond extract (I did not have any and the cakes were good anyway)

icing sugar

Precision: some recipes offer instead to put chocolate in melted tablets instead of cocoa, which surely makes the cookies a little more mellow. It's up to you to see what you prefer. If you are taking chocolate in an already sweetened tablet, consider reducing the amount of sugar.

Preparation:


Arrange cocoa, sugar, vanilla sugar, and melted butter in a large bowl or in the bowl of your food processor. Mix until you get a homogenous paste.


Add one by one the eggs and mix well each time. Then add a pinch of salt and add a drop of bitter almond extract (optional).

Then gradually pour the flour (previously mixed with the yeast), stirring regularly.



Place the dough for 2 hours in the fridge so that it hardens a little.

Take out of the fridge the preparation. Fill a small plate with icing sugar. Using a spoon, or even better a melon ball spoon, take a little dough and roll it in the palm of your hands to form a nice little ball. Dip the dumpling in the icing sugar and arrange it on a baking sheet lined with parchment paper.


Repeat the operation until the plate is full. Be careful to space small balls as they will extend during cooking and may touch each other.
In an oven preheated to 356 ° f  (th.6), bake the meatballs for 10 minutes. Do not over-extend the cooking because even if it seems a little soft, cookies' ghribas will harden as they dry.
Cool and serve chocolate cookies alone or with other cakes. You can also place them in small paper boxes
