200 g sifted flour 

1/2 package of baking powder

5 eggs

180 g of butter

200 g caster sugar

1/2 teaspoon of vanilla extract

the zest of half an unprocessed lemon


1. Preheat the oven to 392 ° F. Put the butter to melt gently in a saucepan. Let it cool down in a cool area.

2. Whisk the eggs with the sugar. Add the lemon zest and the vanilla extract.

3. In a bowl, mix the flour with the yeast and then pour it all over the whipped eggs and sugar.

4. Gently mix the whole without working the dough and then add the cold butter. Let stand 15 min in the fridge or 5 min in the freezer.

5. Butter and flour the madeleines. Fill the molds 2/3 full.

6. Bake for 10 minutes, checking the color. Turn out hot on a baking rack.
