INGREDIENTS
A jar of cottage cheese
2 eggs
150ml semi-skimmed milk
1 sachet of vanilla sugar
125g flour
1 teaspoon baking powder or baking soda
2 tablespoons of sugar
1 pinch of salt
Butter or oil for cooking
A few strawberries and blueberries
A little jam
RECIPE STEPS
In a large bowl, mix the dry ingredients: flour, baking powder, sugar, 1 pinch of salt, and a sachet of vanilla sugar
In another bowl, mix the 2 egg yolks with the milk then add to the dry ingredients while mixing, you obtain a very thick pancake batter texture, let stand 15 to 30 minutes
Beat the egg whites and add them delicately to the preparation (this is the secret of ultra fluffy pancakes)Cook in a very hot buttered skillet for 1 minute on each side.
The edge should be golden, and small bubbles should form on top, it's time to flip the pancake!
