These pastries are as much for dessert, as at the time of the coffee break or for the snack, accompanied by drinks, preferably hot, such as a good tea Mint for a gourmet trip to Morocco!

ingredients


300gr of flour

 200gr of extra fine semolina,

1 soup spoon of baker's yeast,

about 400ml of water (between 400 and 500ml of water),

 1/2 sachet of baking powder,

1 teaspoon of sugar,

1 / 2 teaspoon salt.

Honey syrup perfumed with orange blossom.


  •  Step 1

In a small bowl, put the baker's yeast, the sugar and add 100ml of warm water (taken from the initial 400ml) and mix, let rise a few minutes, at the same time mix the flour, semolina, baking powder and salt.

  •  2nd step

At this stage, if possible, use a kneading robot: pour the yeast and gradually knead the dough by adding the remaining water (Caution: never pour the quantity of water at once, it is necessary to adapt according to the power absorption of flour), the dough should be smooth. It must not be compact or dry. Knead the dough for 20 minutes at medium speed then high.

Cover the bowl with clingfilm and let stand for 3 hours in a warm place, the dough will definitely triple in volume.

  •  Step4
To degas it by pressing and kneading lightly on it (I slightly oiled my hands to facilitate the operation and to avoid that the dough does not stick to the hands). Let it rise again 1 to 3 hours: the dough will again double in volume. At the end of this time, in a deep fryer or a Dutch oven, heat the cooking oil.

  •  Step5
Meanwhile, oil your hands and take a small amount of dough (the size of an egg), form a hole in the center by stretching to widen the hole while maintaining a rounded shape and plunge the donut into hot oil. Cook on both sides until golden brown. and repeat the operation until the dough is used up

Drain as you go on paper towels and soak them in a light syrup with honey and orange blossom while they are still hot. You can sprinkle some sesame, if you wish.

These donuts are ideally tasted hot or warm. The interior must be honeycombed and deliciously melting. To be served with mint tea or coffee. If you are in a hurry, you can sprinkle them with icing sugar like donuts.
