 another variant of Brick Bourek or Bourak with zucchini shrimp and cheese for the month of Ramadan. Deliciously crispy and tasty to wish. A very easy recipe as I have you accustomed in 15  minutes maximum   ( if you have brick sheets ready ) you have an entry or a presentable accompaniment to put on the table of your guests. but for me, I will use brick sheets homemade.

making homemade Brick leaves may seem difficult, but the principle is very simple and easy, with a little perseverance, you will succeed in making delicious leaves, fine and perfect for your rolls and pastillas (Individual pastilla with minced meat) so common in Oriental cooking or any other type of recipe. They can serve as much for the appetizer as for your starters and dishes, as a pie shell, to make small slippers (Brick with tuna, samosas with pepper egg), etc ... and especially to make pastries and sweet treats like Briouates with almonds, Date Bricks, and Honey Cigars.

In short, the uses are endless and the crispness of your homemade brick sheets will make the difference, without a doubt!

Ingredients:  ( use 1 medium bowl = 250 g)

2 bowls of flour

2 tablespoons of table oil

1/2 teaspoon of salt

40-50cl of water.


Choose a medium bowl, such as breakfast as a measure for flour. Put the flour in a bowl and add the oil, salt, and water little by little to obtain a smooth paste that mixes well before passing it to the mixer. Blend and let stand 30min.

Fit a non-stick pan on a casserole filled with water, place over medium heat. The water vapor must not escape from the edges of the pan. Using a clean brush, brush with dough, the bottom of the pan.

Once the edges of the leaves are peeled off, lift it by its edges to peel it off easily. Put the leaves on a clean cloth and cover them so that they do not dry out. Coat their surface with oil to keep them for a few days.

Brick leaves are kept in a sealed bag or box to prevent them from drying out and becoming brittle.

Ingredients: - 6 brick sheets - 1 small grated zucchini

- 100g shrimp

- salt and black pepper

- 2 portions of laughing cow

- grated cheese


1. Sauté the shrimp in a pan with a knob of butter or olive oil and set aside.
2. In the same pan fry the grated zucchini, when they are tender add the cooked shrimp as well as the portions of the laughing cow cheese, mix with a wooden spatula so that the cheese melts, salt slightly, and pepper. Cool the stuffing.
3. Put 1 teaspoon of stuffing on the end of the pastry sheet, add a little grated cheese to roll the sheet, and do the same for each sheet of pastry.

4. Heat the frying oil and dip each brick, brown on each side. Leave to drain in a strainer and place on a plate covered with so plain.


Note :

- If we do not use the whole bourek we can freeze them, to fry them, we do not need to defrost.
- If you prepare in advance do not forget to film the plate so that the leaves do not dry out.
