brownie cookies are quite simply a compilation of two recipes: the crispy surface of the cookies and the center melting brownies which gives us a beautiful marriage of flavors.
In order to make these brownies cookies and especially to obtain this cracked and shiny surface, it is imperative to allow the previously melted chocolate to cool, rest assured otherwise your cookies will not be bad I tested both versions and they are just as good.
The added soluble coffee intensifies the taste of chocolate, if you are not a coffee lover you will not feel it in these cookies besides I always add soluble coffee in my chocolate cakes they will only get better in taste.
You will notice that the dough will not be like that of cookies but more or less liquid like that of brownies, it will be necessary to use a small spoon in order to deposit small heaps which will spread out but it is quite normal.
I hope these tips will help you get some nice brownie cookies.

Prep time 10 mins
Cooking time 10 mins
total time 20 mins
Ingredients
200 g dark chocolate
40 g semi-salted butter
2 eggs
110g caster sugar
1 teaspoon of instant coffee
1 teaspoon liquid vanilla extract
40 g flour
150 g chocolate chips
Instructions
Preheat the oven to 350 F.
Melt the chocolate and the butter in a bowl in a double boiler or in the microwave (double boiler for me).
Remove from the water bath and let cool.
In a salad bowl whisk together sugar and eggs until bleaching (it is not necessary to use an electric mixer a manual whisk is enough).
Pour the melted and cooled chocolate (this is important) over the eggs and stir in.
Stir in instant coffee, flour, and liquid vanilla extract.
Pour the chocolate chips.
On a baking sheet covered with parchment paper place small heaps of dough with a small spoon, spacing them apart.
Bake for 10 minutes they will be fragile when removed from the oven this is normal. Leave to warm on the baking sheet before removing them using a flat spatula and place them on a wire rack until completely cooled.
Enjoy!
