For the lemon cream:

3 eggs
10 g cornflour
120 g  ( 4 oz ) of lemon juice


Preparation of the shortbread dough:

First heat your oven to 356 ° F and butter a pie pan.
In a bowl mix the flour, almond and icing sugar at the same time, then add the pieces of butter and egg and beat with the electric mixer.
Once you have a soft dough, spread it on a floured work surface with a rolling pin and put it on the mold.

Preparation of the lemon cream:

First beat the eggs with the sugar and cornflour in a bowl.
