Ideal to finish a hearty meal, this white cheese pie is ideally light and fragrant. Try a variation with lemon zest, you will not be disappointed! Some go from the bottom of  Shortcrust pastry dought, for an even lighter recipe!

List of ingredients

For the sweet broken dough:

250g of flour

120 g of butter

40 g of sugar

Seeds of a vanilla pod or 1 packet of vanilla sugar

50 g of milk

1 pinch of salt

For garnish :

500 g of cottage cheese (at 0% for a light version, or 20%, recommended)

100 g of fresh cream

4 eggs

40 g corn starch

150 g of sugar

Seeds of a vanilla bean  / or zest of an untreated lemon

Steps in the recipe

Prepare the Shortcrust pastry dough (or use a ready one if you have little time): pour the flour in a large bowl, in the center work with the fingertips soft butter to incorporate well. Add salt, sugar, vanilla. Finally, bind the dough with the milk. Form a ball without overworking the dough and put it in the fridge for 1 hour
Spread the dough in a pie shell or cake pan with high edges
Separate the whites from the egg yolks and beat the whites to firm snow
Beat egg yolks with sugar and vanilla
Add cornflour with a spatula, then liquid cream and cottage cheese
Gently add the whites to the snow
Pour over the dough and bake in a hot oven for 30-35 minutes (347 ° F )
