PREPARATION
1 Put the flour in a bowl with salt and sugar.
2 Make a well in the middle and pour in the eggs lightly beaten with a fork.
3 Begin to gently stir the flour with a wooden spoon. When the mixture becomes thick, add the cold milk little by little. You can use a whisk but always gently to avoid lumps.
4 When all the milk is mixed, the dough should be fairly fluid, if it seems too thick, add a little milk. Then add the melted butter, mix well.
5 Cook the crepes in a hot pan (no need for fat, it is already in the dough). Pour a small ladle of dough into the pan, make a rotation to spread the dough over the entire surface. Put on the fire and when the turn of the crepe is colored in light red, it is time to turn it.
6 Cook for about a minute on this side and the crepes are ready.
