5 apples
400g puff pastry
Flour
½ lemon
75g of sugar
20g of butter
1 egg

Squeeze the half lemon. Peel the apples cut them in 4, remove the cores and seeds then cut them into cubes that you will sprinkle with lemon juice. Mix well with the lemon juice then drain the diced apples before adding them to a bowl with the sugar.

On a floured work surface, roll out the puff pastry and cut it into six round crusts 10 cm in diameter and not too thin.
Line a baking sheet with parchment paper.

Preheat the oven to 240°C / 464°F.
Moisten the edge of each dough circle with a pastry brush, then spread the diced apples over half of each with a spoon. Add a few knobs of butter. Fold the other half over the filled one. Join the edges of each slipper well by turning the seam on itself then by guilloché the edge of the slipper.
Beat the egg in a bowl and brush the top of the turnovers.
Leave to dry, then with the tip of a knife, draw crosses, taking care not to pierce the liner.
Slide the tray into the bottom of the oven, cook for 10 minutes at 240° C / 464 ° F then continue
cooking at (200° C ) ( 392 F ) for 25 to 30 minutes. Serve hot or lukewarm.
